The ultimate leftover dish

I'm going to Fukuoka for work tomorrow, so I'm going through all the vegetables left in the fridge.
That said, I haven't gone shopping for a few days, so I don't have much left.
This is a mixed dish of minced chicken meatballs that I made the other day when making hot tofu, and leftover vegetables.
Chop up all the vegetables and marinate them. Those that can't be eaten raw are boiled with freeze-dried tofu.
Surprisingly, the dish turned out pretty well.
If you make this marinade, it's delicious on a regular salad,
The bright colours make it a great addition to our family menu, which generally doesn't have much colour.
